    Ingredients

    For the Cake:

    • 1½ cups all-purpose flour
    • 1 tsp baking powder
    • 5 large eggs (separated)
    • 1 cup sugar (divided)
    • ⅓ cup whole milk
    • 1 tsp vanilla extract

    For the Three Milks:

    • 1 can (14 oz) sweetened condensed milk
    • 1 can (12 oz) evaporated milk
    • 1 cup heavy cream
    • 1 tsp vanilla extract

    For Topping:

    • 2 cups heavy whipping cream
    • 3 tbsp sugar
    • Fresh strawberries or berries
    • Ground cinnamon for dusting

    Instructions

    1. Preheat oven to 350°F. Grease and flour 9x13" pan. Whisk flour and baking powder.
    2. Beat egg yolks with ¾ cup sugar until pale. Add milk and vanilla. Fold in flour mixture.
    3. Beat egg whites to soft peaks. Gradually add ¼ cup sugar, beat to stiff peaks.
    4. Gently fold egg whites into batter in three additions. Pour into prepared pan.
    5. Bake 30-35 minutes until golden and toothpick comes out clean. Cool completely.
    6. Poke holes all over cake with fork. Mix three milks and vanilla, pour slowly over cake.
    7. Refrigerate 4 hours or overnight. Whip cream with sugar, spread over cake.
    8. Garnish with berries and cinnamon. Keep refrigerated until serving.

    Sponge Cake Secret: The key to tres leches is an airy sponge that can absorb maximum liquid. Don't overmix when folding egg whites - gentle incorporation keeps the cake light.

    Soaking Technique: Poke holes generously and pour milk mixture slowly, allowing it to absorb gradually. The cake should be moist but not swimming in liquid.

    Resting Time: Refrigerate at least 4 hours, but overnight is ideal. This allows milk mixture to fully permeate the cake and flavors to meld.

    Whipped Cream Stability: Add whipped cream topping just before serving, or stabilize with 1 tsp gelatin dissolved in 2 tbsp water if making ahead.
