Ingredients
For the Pudding:
- 1 cup all-purpose flour
- 1 tsp baking soda
- Pinch of salt
- 1 cup sugar
- 1 large egg
- 1 tbsp apricot jam
- 1 tbsp white vinegar
- 1 tbsp butter (melted)
- 1 cup whole milk
For the Cream Sauce:
- 1 cup heavy cream
- ½ cup butter
- ¾ cup sugar
- ½ cup hot water
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F. Grease 9x13" baking dish. Sift flour, baking soda, and salt.
- Beat egg and sugar until pale and fluffy. Mix in apricot jam.
- Combine vinegar and milk (it will curdle - this is correct). Add melted butter.
- Fold dry ingredients into egg mixture alternately with milk mixture. Mix until just combined.
- Pour batter into prepared dish. Bake 35-40 minutes until golden and set.
- Make sauce: combine cream, butter, sugar, and hot water in saucepan. Heat gently until melted.
- Remove from heat, stir in vanilla. Pierce hot pudding all over with skewer.
- Pour hot sauce over hot pudding. Let soak 10 minutes. Serve warm with vanilla ice cream.
