    Ingredients

    For the Caramel:

    • 1 cup granulated sugar
    • ¼ cup water

    For the Flan:

    • 1 can (14 oz) sweetened condensed milk
    • 1 can (12 oz) evaporated milk
    • 1 cup whole milk
    • ½ cup dulce de leche
    • 5 large eggs
    • 2 tsp vanilla extract
    • Pinch of salt

    Instructions

    1. Preheat oven to 350°F. Make caramel: cook sugar and water until amber. Pour into 9" round pan, swirl to coat.
    2. Warm dulce de leche slightly in microwave until pourable. Set aside.
    3. Blend condensed milk, evaporated milk, whole milk, dulce de leche, eggs, vanilla, and salt until smooth.
    4. Strain mixture through fine-mesh sieve into caramel-coated pan.
    5. Place pan in larger roasting pan. Fill roasting pan with hot water halfway up flan pan.
    6. Bake 55-65 minutes until center jiggles slightly but edges are set.
    7. Remove from water bath, cool to room temperature. Refrigerate 4 hours or overnight.
    8. Run knife around edge, invert onto serving plate. Caramel will flow over.

    Chef's Notes

    Caramel Timing: Watch caramel carefully - it goes from perfect to burnt quickly. Aim for deep amber color (like an old penny) for best flavor without bitterness.

    Water Bath Essential: The bain-marie (water bath) ensures gentle, even cooking and prevents cracks. Water should be hot but not boiling when added.

    Doneness Test: Flan is ready when center jiggles like set Jell-O, not liquid. It continues cooking from residual heat, so slight underbaking is better than over.

    Unmolding Technique: Run a thin knife around edge before inverting. If caramel is stubborn, briefly place bottom of pan in warm water to loosen.

    Make-Ahead Perfection: Flan actually improves after 24 hours as flavors meld and texture sets perfectly. Can be made 2-3 days ahead.
