    Ingredients

    For the Dumplings:

    • 2 cups all-purpose flour
    • 2 tbsp cornstarch
    • 1 tbsp sugar
    • 1 tsp instant yeast
    • 1 tsp cardamom powder
    • ¼ tsp saffron threads
    • 1½ cups warm water
    • Vegetable oil for frying

    For Serving:

    • 1 cup date syrup
    • 2 tbsp sesame seeds (toasted)
    • Optional: honey or simple syrup

    Instructions

    1. Dissolve saffron in 2 tbsp warm water. Let steep 5 minutes.
    2. Mix flour, cornstarch, sugar, yeast, and cardamom in large bowl.
    3. Add saffron water and remaining warm water. Mix until smooth batter forms.
    4. Cover and let rise in warm place for 45-60 minutes until bubbly and doubled.
    5. Heat oil to 350°F in deep pot. Oil should be 3 inches deep.
    6. Use wet spoon to drop small balls of batter into hot oil. Fry in batches.
    7. Fry 2-3 minutes until golden brown, turning occasionally. Drain on paper towels.
    8. Drizzle generously with date syrup and sprinkle with sesame seeds. Serve warm.

    Chef's Notes

    Batter Consistency: The batter should be thick but pourable, similar to pancake batter. If too thick, add water one tablespoon at a time. If too thin, add a bit more flour.

    Oil Temperature: Maintaining 350°F is crucial - too hot and they'll brown before cooking through, too cool and they'll absorb oil and become greasy. Use a thermometer for best results.

    Shaping Technique: Keep your spoon wet with water to prevent sticking. Drop small amounts (about 1 tablespoon) for even cooking and perfect bite-sized portions.

    Date Syrup Alternative: If date syrup isn't available, mix equal parts honey and molasses for a similar deep, caramel-like sweetness.
