Herb-Roast Chicken

The Sunday roast, dressed for fall

Golden herb-roast chicken with root vegetables on a carving board

A whole roast chicken is the most honest dish on the fall table, and the most forgiving to pair. Thyme, garlic and a fistful of root vegetables roast underneath the bird, catching the drippings and turning into a side dish on their own. The skin must be dry before it goes in the oven, the oven must be hot, and the bird must rest — those three rules carry the entire recipe. Everything else is timing.

    Wine Pairing

Recommended: Red Burgundy or Willamette Pinot Noir, Beaujolais-Villages, or Chablis

Roast chicken is the great crossover: it takes a red as easily as a white. Pinot Noir's cherry fruit and earthiness love the thyme and browned skin; Beaujolais' Gamay is the juicier weeknight answer; and an unoaked Chablis cuts the drippings like a squeeze of lemon. One bottle of each on the table solves the whole debate.

    Ingredients

    For the Chicken:

    • 1 whole chicken, 3½–4 lbs, air-dried uncovered in the fridge overnight
    • 3 tbsp butter, softened
    • 6 sprigs fresh thyme, leaves picked
    • 4 cloves garlic, minced
    • 1 lemon, halved
    • Salt and cracked black pepper

    For the Pan:

    • 1 lb baby potatoes, halved
    • 4 carrots, cut into thick batons
    • 2 parsnips, cut into batons
    • 1 head garlic, halved crosswise
    • 2 tbsp olive oil
    • 4 sprigs thyme

    Instructions

    1. Prep: Heat the oven to 425°F (220°C). Pat the chicken bone dry with paper towel — dry skin is the whole difference between golden and pale.
    2. Season: Mix the butter with the thyme leaves and minced garlic. Work it under the skin of the breast and over the whole bird. Season generously inside and out, then stuff the lemon halves into the cavity.
    3. Build the pan: Toss the potatoes, carrots, parsnips, garlic head and thyme sprigs with olive oil and a good pinch of salt in the bottom of a roasting pan. Set the chicken on top, breast up.
    4. Roast: Roast for 20 minutes, then drop the heat to 375°F (190°C) and continue for 55–70 minutes, until the thigh reads 165–170°F (74–77°C) and the juices run clear.
    5. Rest: Transfer the chicken to a board and rest for 15 minutes. Toss the vegetables in the pan juices and return them to the oven to glaze while the bird rests.
    6. Carve: Remove the legs, then the breasts, and serve over the pan vegetables with the roasted garlic squeezed over everything.

    Chef's Tips

    • • Salt the bird the night before; dry-brining seasons it to the bone
    • • Save the back and wing tips in the freezer for stock
    • • Deglaze the roasting pan with a splash of the Pinot Noir for a two-minute jus
    • • For dark meat lovers, spatchcocking cuts the roast time by 20 minutes
    • • Leftover meat is tomorrow's risotto or pot pie filling
