Instructions
- Brown the bacon: In a large Dutch oven over medium heat, cook bacon until crispy. Remove and set aside, leaving fat in pot.
- Sear the beef: Pat beef dry and season with salt and pepper. Working in batches, brown beef on all sides in bacon fat and olive oil. Remove and set aside.
- Build the base: In the same pot, sauté onions and carrots until softened, about 5 minutes. Add garlic and tomato paste, cook for 1 minute.
- Deglaze and braise: Sprinkle flour over vegetables and stir. Pour in wine, scraping up browned bits. Add stock, beef, bacon, bay leaves, and thyme.
